By the time the Maramount Corp. of Brooklyn had called the Jersey City schools to inform them that they were recalling 707 beef patties for possible Listeria contamination, most of the patties had been eaten by students at four area schools. Only 35 recalled patties remained, according to Susan Sollender, the director of food services for the Jersey City school district.
The call about the contaminated beef patties came on Christmas night, but the patties had been delivered on December 19. On December 26, the U.S. Department of Agriculture inspected those schools that had housed the patties.
No students have become ill with listeriosis, the disease caused by Listeria contamination. But with an incubation period of three weeks, cases may occur.
The beef patties that were voluntarily recalled by the manufacturer after federal investigators, during a routine inspection, found evidence of Listeria were part of microwaved meals consumed by students in pre-Kindergarten through eighth grade.
